50% Carignan/30% Syrah/20% Grenache. The Carignan ranges in age from 50 to 100 years old, on hillsides in the AOC of Minervois; the Syrah is over 40 years old. The fruit is hand-harvested, mostly destemmed, and fermented with selected yeasts in vat. After a maceration of several weeks, it is aged in a combination of vat and used barrels for 2 years.
